How to grill a delicious Jersey tomato ‘burger’
This time of year I like to take advantage of the abundance of fresh Jersey tomatoes that are available everywhere.
You've had them in salads, on sandwiches and fresh sauces. How about a grilled, thick, juicy slice of Jersey tomato as the feature of a sandwich? It's been a forever favorite of my daughter to have sliced fresh Jersey tomatoes with sharp cheese on a roll. Nice. But grilled? Wow! Checkout this amazing and vegetarian-friendly recipe.
INGREDIENTS (Serves 2)
1 large beefsteak Jersey tomato
2 kaiser rolls
Olive oil
1/2 cup fresh basil, chopped or shredded
Sliced, fresh mozzarella cheese
salt, pepper and garlic powder (to taste)
Slice the tomato into thick slices (about the size of a thick hamburger). Sprinkle both sides with the salt, pepper and garlic powder mixture. Coat both sides with good, extra-virgin olive oil.
Place on the grill on medium-high heat for just a couple of minutes, flipping halfway through, until there's a slight char on each side. Meanwhile, brush the cut side of the rolls with olive oil and toast them on the grill.
Next, top each tomato slice with a generous amount of basil and top each with a slice of mozzarella cheese. Heat until the cheese becomes soft, but not completely melted. Serve on the toasted bun. Buon appetito!
