Long before it became popular on cooking shows and in upscale Italian restaurants, my grandmother was making "focaccia."

She called it "apeetz" in her Italian accent, or a pizza in English. She didn't have a pizza oven or a fancy stone from William Sonoma so she used a baking sheet. The dough was homemade and thicker and she didn't like to use sauce or much cheese.

It came out delicious and looks suspiciously like what we today call "focaccia." Since you bake it on a simple cookie sheet and you can buy dough in any respectable New Jersey supermarket, you should give it a try. If I can do it...
