While we have all of these amazing fresh ripe Jersey tomatoes, use them in any way you can.

They're only around for a few short months and make every recipe that much better.

Pico de gallo is a coarser, fresher version of salsa. It's a more authentic Mexican way of enjoying salsa. You can use it as a dip with chips, but also as a garnish on quesadillas or grilled meats.

It's simple quick and easy, yet adds so much flavor to any Mexican dish, especially this time of year. Go for it!
