If you're looking for a delicious healthy app that you can easily make and never have any leftover, you've got to try my mother-in-law Darlene Allard's "veggie pizza."

The recipe is simple and great served cold.

INGREDIENTS:

2 packages refrigerated crescent rolls (dough)

2 packages of light cream cheese (about 8 oz softened)

1 package dry vegetable soup mix (sift out the dried veggies and use the ground seasoning)

sliced cherry or grape tomatoes (about 2 cups)

broccoli florets (about 2 cups)

1 small red onion, chopped

1 small green pepper, chopped

DIRECTIONS:

Roll out the crescent dough and press the pieces together on a sheet pan and bake until golden brown. Allow to cool slightly.

Combine the soup mix with the softened cream cheese. Carefully spread the cream cheese mixture over the finished "crust." Top with the assorted veggies.

Slice and enjoy!
