It was a hit with the morning crew and now it can be a hit at your next holiday party: Eric Scott's buttered rum! It's easy to make and even easier to sip, here's how it's done:

  • Melt two sticks of butter over low heat until no longer bubbling
  • Whisk in two and half cups of spiced apple cider
  • Add two teaspoons of ground cloves (or six whole cloves)
  • Add about ½ cup of dark brown sugar
  • Add three cinnamon sticks
  • Whisk until sugar is melted and the batter is well blended
  • DO NOT allow to come to a boil
  • Add 1 ½ ounces of dark rum to a glass or mug
  • Ladle in batter to taste
  • Garnish with a cinnamon stick or fresh nutmeg
  • Serve warm and enjoy!

*** For an added treat, top with fresh whipped cream or a half scoop of vanilla ice cream
