Easy Cinco De Mayo recipe — Cara DiFalco cooks up ‘risotto con pollo’
About a month ago, we gave our official Italian Chef of the Bill Spadea Show, Cara DiFalco a challenge. Make us a special dish for Cinco De Mayo mixing two of my favorite cuisines, Mexican and Italian. Cara didn't just succeed, she absolutely killed it with the dish she brought in today for us!
Cara created a dish inspired by a Mexican-Italian infusion, called Risotto Con Pollo. It fused the Spanish dish of arroz con pollo (chicken and rice) with Italian risotto. WOW! It was absolutely outstanding! This is why Cara is our official chef of the morning show!
