The old Yankee Tower diner in Fairview may be gone, but it's famous meatloaf recipe that I used to have every Friday night with my father lives on.

In fact, Kerrie Delli Santi liked the meatloaf recipe so much that she sent me her daughter's recipe for "Pioneer Woman's mashed potatoes" that go perfect with it. Here's the recipe:


5 pounds potatoes
8 oz cream cheese
1 and 1/2 stick butter
1 and 1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup half and half (or milk)

Boil potatoes until cooked. Drain and return to pot. Mash the potatoes then add the cream cheese, butter, salt and pepper. Whip until smooth. Then add the half and half to the desired consistency.

There you have it! As we say in the old country: "Mangia!"
