One of my favorite traditional holiday dishes (thanks to my nana from Brooklyn) are potatoe latkes. They're good for breakfast, lunch or dinner served with applesauce or sour cream.   Here's the recipe.
Ingredients:
5 large potatoes (peeled)
1 large onion
4 eggs
1/3 cup matzo meal
1 tsp. salt
                                                           1/4 tsp. pepper
1/3 cup of oil for frying.
Grate potatoe and onion.  Use the fine side of the grater.  Mix potatoes and onions with eggs.  Blend in matzo meal salt and pepper.  Heat oil in frying pan.  After the oil is hot, add one tablespoon at a time into the pan.  Fry both sides of the latkes until they're golden brown.  I know you'll enjoy sitting by a Menorah or Christmas tree!
