While Super Sunday may be the biggest day for football, it’s also the second biggest day for eating! (Thanksgiving of course ranks number one!) With that said I’ve picked some of my favorite appetizers to help make your Super Sunday menu that much better.
I first made this recipe back in the mid 80’s while I was living and working for a short time in LA. I was living and hanging out with my Uncle Pete, a great cook in his own right. I was craving the “old world” flavor of a good cacciatore.
Back when I was putting my cookbook together, Michele Pelenza, who at the time was host of "After Hours" from 7p - 12mid, gave me this great recipe. It has become one of my go to meals when I am pressed for time.
Recently I was in a chicken parmagiano coma. I had chicken parm five times out of a nine night period. I was in a chicken parm haze, drugged on the goodness of good chicken parm, and couldn’t get enough.
