I was ecstatic to work at New Jersey 101.5 this week when I was told that I'd be a fill-in producer for The Dennis and Judi Show. But as I was driving down Route 195, all I heard was Bill Spadea talking about his seven fish dinner for Christmas.

Even though it was at the crack of dawn, it made me yearn for some crab cake and salmon!

Besides the seven fish dinner, Spadea was kind enough to give us his pork roll hash recipe as well!

Cut several potatoes, yukon gold work the best into small pieces.

Heat olive oil in frying pan, then cook potatoes until you start to get some brown edges. I cover it to make sure the potatoes cook through.

Add salt, pepper, thyme, rosemary, cayenne and parsley to the potatoes while cooking.

Then cut up pork roll in same small cubes as potatoes.

Add to the cooking potatoes.

Dice a small onion — one small onion for 3-4 potatoes — and add to the mix in the pan.

Once you get browning on the pork roll it's time for a couple cloves of garlic mashed through a garlic press—- you can mince with a knife if you don't have a press. Give the garlic 30 seconds to cook. You don't want to burn it.

Then add about a cup of cheese — I like sharp cheddar with this hash. Cover so the cheese melts through. Plate it and serve with a fried egg on top!
