This recipe comes from my producer Chris who is crazy about gardening and growing his own food. He recently brought in some of his corn to share and everyone in the studio started trading recipes of how they prepare their Jersey Fresh corn.
Eva from Jamesburg sent us this interesting dip that incorporates all the good tastes of pizza. Eva says serve it with vegetables and chips. I also recommend serving bagel chips or those toast rounds with this dish.
This is very simple yet elegant appetizer for your guests. The trick is to make sure that you use a good quality cocktail sauce. I like the extra bite of horseradish. The freshly ground pepper adds a nice kick, too!
For about five years in a row I would head up to Martha’s Vineyard after my show on Labor Day and rent a house with a group of my wonderful friends. We’d have a great time and one of my favorite treats up at the Vineyard was the lobster rolls.
