You've no doubt had a 'Caprese Salad' somewhere around here in the last few years.

It allegedly comes from the island of Capri just off the Amalfi Coast in Southern Italy, where the tomatoes are fantastic (but not as good as ours) and the fresh mozzarella is amazing.

Fresh "mutz", fresh tomatoes, some basil and a drizzle of olive oil. Almost heaven! You may have seen the hors d'oeuvre version on a toothpick at a party. Cute but bland.

This summer I found the key to making a tastier one.
