I was eating these on the air yesterday and Dennis asked me to post the recipe. Seems like a lot of ingredients but they're really easy to make! And it's so much healthier than the ones from the store with all that junk in 'em.

Ingredients:

  • 2 cups chopped mixed veggies of your choice in whatever ratio you choose (I use kale, spinach, artichokes, mushrooms, peppers, carrots, corn, fresh or frozen)
  • 1 15 oz can chick peas
  • 1 15 oz can white beans
  • 2 cloves garlic
  • 1/2 cup chopped onion
  • 1/2 sliced olives (I use a mixture of black and kalamata)
  • 1/2 cup chopped walnuts
  • 1T each Dijon mustard, ketchup, worcestershire sauce
  • *1 c Cooked brown rice (Or use 1 c almond flour or quinoa instead of rice to make it lower carb, but they won't hold together as well)
  • Spices:
    • Garlic powder
    • Onion powder
    • Cumin
    • Dried parsley
    • Oregano
    • Salt & Pepper

Sauté onion garlic and veggies for 5 minutes all together. Salt and pepper to taste
Put mixture into bowl of food processor, and add all remaining ingredients. Once again, salt and pepper to taste. Pulse mixture till combined but chunky. Make 10-12 patties out of mixture and pan fry (not in olive oil) 3-4 minutes on each side or till golden. Turn very carefully. Burgers will be soft. but firmer after frying. Freeze enough for the week and pop em out as you go!

For a more "Italian" flavor add marinara sauce (3 T instead of Worcestershire, ketchup and mustard, chopped sun dried tomatoes and oregano instead of parsley.) t
