Judi Franco’s Recipe for Fresh Herb Tomato Tapenade
Not to be outdone today by my partner Dennis “Horatio” Malloy, who posted a recipe earlier today (6/11), I am giving you one of my favorite recipes as well.
Fresh Herb Tomato Tapenade (for chicken or fish)
1/2 c sundried tomatoes in oil
2 T oil from the jar of sundried tomatoes
1 doz cherry tomatoes
1/4 c olive oil
1/4 each fresh Dill, parsley, basil, anise
3 garlic cloves
Salt and pepper
Preheat oven to 350 for fish, 375 for chicken. Whir all ingredients in food processor for 2 minutes, put salt and pepper on on lb. of either fish or chicken breasts then spread tapenade on fish or chicken.
cover and bake fish at 375 for 20 minutes
chicken breasts for 30 minutes
