Whenever you travel to a special place, everything seems to taste better, every sunset seems more spectacular, and with every early morning walk, the air seems so much better.

This is one dish that I can come close to replicating from my trips to Southern Italy when certain veggies are in season here in Jersey. Bell peppers are in season and there's such a difference between the fresh local version and the stuff we buy the rest of the year in the supermarket.

It's a shame not to take advantage of that fresh taste.
