I grew up thinking those tubes of pasta filled with ricotta cheese and smothered in tomato sauce were manicotti. It turns out, in Italy manicotti is made with a crepe and is not a pasta dish, but somewhere crossing the Atlantic, as with many other foreign dishes, things got mixed up. What we've been eating is actually called cannelloni. They're versatile and delicious and I want to show you how I make them. It's easy!
