This is one of my favorite warm weather grill meals of all time. This is a version of a dish I call Grilled Greek Chicken. You need these simply ingredients.

- one package of thinly sliced chicken cutlets

- 2 red peppers

- 1 ripe tomato

- 1/4 cup of chopped flat leaf parsley

- 12 asparagus spears

- tzatziki sauc

- 2 dozen Kalamata olives

- 4 slices of flatbread

- 1 package of crumbled feta cheese

- 1/4 cup of toasted pine nuts

Marinate the chicken in lemon juice, olive oil, white wine and Greek seasoning. Set aside. Grill the red peppers til roasted. Place in paper back in freezer. Blanch the asparagus, brush with olive oil and grill til lightly toasted. Grill chicken slices. They'll cook quickly because their so thin. You can buy Tzatziki sauce at some supermarkets, but it's pretty easy to make your own as well.

Place flatbread on plate,

Top with grilled chicken cutlet, large slices of roasted pepper (peeled and seeded). Top with tzatziki sauce, crumbled feta cheese, diced tomato, chopped parsley, Kalamata olives, and pine nuts. Garnish with grilled asparagus spears. Serve warm. Should feed about 4 adults.
