There's nothing like sausage and peppers, and there are few dishes as "Jersey" as this Italian classic, whether you're eating them at home or enjoying them as you stroll the boardwalk at the Jersey Shore.

This recipe is easy to make and a perfect dish to serve for the Super Bowl, either as a sandwich or with some pasta (or straight out of the pan when it's done, if you really can't wait to dig in).

INGREDIENTS

  • 3 pounds of sausage
  • 3 large green peppers, sliced
  • 2 large red peppers, sliced
  • 1 onion, sliced
  • Sliced potatoes (optional)
  • 1/2 cup of good olive oil
  • 2 tbsp. of basil
  • 2 tbsp. of oregano
  • 1 tbsp. of garlic salt

Preheat oven to 375 degrees. Slice the peppers and onion.

After spraying the bottom of the baking dish or pan with nonstick cooking spray, place the sausage on the bottom of the pan. Pierce each piece three or four times with a fork or the tip of a knife so that the fat can leak out.

Cover the sausage with the sliced sausage and peppers. Drizzle the top with the olive oil and sprinkle with garlic salt, oregano and basil. 

Bake at 375 degrees for 60 minutes and enjoy!
