Dennis Malloy cooked Italian-style at the Trenton Farmer's Market using Jersey Fresh produce.On Scene News' reporter & photographer Brian McCarthy took a break from the usual breaking news he covers to photograph Dennis' presentation.


 

 

Here is a list of Dennis' recipes and cooking ideas from yesterday's cooking seminar:

Pesto Sauce

  • 2 cups basil leaves
  • 4 Tbsp toasted pine nuts
  • ¼ cup parmesan or pecorino romano cheese
  • ¼ cup olive oil
  • Pinch of salt
  • ½ pinch of black pepper

Put all ingredients in food processor, and pulse until a coarse chopped consistency is achieved.

 

Jersey Tomatoes w/ Pesto

Slice Jersey tomatoes and top with Pesto & toasted pine nuts.

Crumble feta, gorgonzola, or goat cheese on top.

Drizzle with olive oil.

 

Bruschetta

  • 3 large tomatoes, chopped
  • ½ medium red onion, diced
  • 2 cloves garlic, minced
  • ½ cup fresh basil, chopped
  • ¼ cup fresh Italian parsley, chopped
  • Pinch of salt
  • Pinch of pepper
  • 4 Tbsp olive oil

 

Grilled Chicken Cutlets Topped w/ Pesto & Bruschetta

Marinate thinly sliced chicken cutlets in lite Italian dressing for 30 minutes.  Grill the chicken and top with pesto & bruschetta for a fresh summer alternative to  chicken parm.

 

Southwestern Corn on the Cob

Par boil corn.

Place on hot grill, just long enough to make grill marks.

Roll ear of corn in melted butter.

                  Top w/ blackening seasoning & sprinkle w/ parmesan cheese.

Slice into 2 pieces for a great summer appetizer.
