Craig Allen’s Peanut Butter Bars
In honor of Big Joe's return to the New Jersey 101.5 airwaves tomorrow, I am going into "food mode" here at nj1015.com...specifically, dessert mode!
I have been getting raves from family and friends for this simple bars recipe. It combines two of my favorite things...peanut butter and CHOCOLATE!
It goes without saying, that if you have a peanut allergy, this is not the recipe for you!
Peanut Butter Bars
1/2 C butter (melted)
1/2 C sugar
1/2 C brown sugar
1 egg
1/3 C peanut butter (I use 1/2 C because more is yummier!)
1/2 t vanilla
1 C flour
1/2 t baking soda
1/4 t salt
! C oatmeal
Topping: 1&1/2 C chocolate chips
**************************************
Cream butter and sugars until fluffy.
Add egg, peanut butter and vanilla, and beat thoroughly.
Sift flour, salt and baking soda.
Add to creamed mixture, and beat until blended.
Add oats, and blend thoroughly. Batter is heavy.
Spread into greased 9x13" pan.
Bake 350 degrees for 20 minutes (still shakes).
Upon removing from oven, sprinkle with chocolate chips.
Let stand a few minutes, as the warm bars melts the chips.
Spread melted chocolate evenly over the top of the "bars."
Let cool. Cut and enjoy!
Maybe, you'd like to serve the peanut butter bars with some ice cream...
SNOW ICE CREAM to be specific...I published that recipe last weekend!
