On weekends, the music comes out to play and so do I. I have the best job in the world, playing Jersey’s Favorite Hits, and I’ve been doing it for more than 20 years here on New Jersey 101.5. You can catch me on Friday nights from 7 p.m. to midnight as well as Saturdays and Sundays from 10 a.m. to 3 p.m. We have jokes, traffic, weather and great music. One of the great things I love to do is remote broadcasts and appearances. We go all over New Jersey for more fun and I get to meet the people that enjoy the show and our fine station. I live true to my motto: “Livin’ Large and Lovin’ Life.” Who has more fun than me?
Big Joe Henry
Big Joe’s Big Meatballs and Great Tomato Sauce
One of the great elements of living in New Jersey is that you come across so many people who have the “best” recipe for meatballs, sauce, and other Italian dishes.
Wishes come true for Jersey kids
Sunday I had the pleasure of broadcasting my show from a remarkable place, Make A Wish of New Jersey’s Wishing Place in Monroe.
Big Joe’s Spiked Apple Cider Cocktail
This time of year there are few things better than Jersey Fresh apple cider. However, even great things can be improved upon. Here's one of my favorite cocktails to make when the leaves are falling and the days are growing longer.
Big Joe’s Authentic Gumbo
Back in December 2005, right after Hurricane Katrina hit, I took a group of the most terrific people I know, which included my comrades from New Jersey 101.5, The Rock and Roll Music Fund and some great volunteers, down to the Gulf Coast.
Big Joe’s Classic Lasagna with Homemade Sauce
Why does lasagna taste so good the next day, and the day after that and the day after that? Good lasagna takes a little time to put together but it really is a total meal within itself.
Big Joe’s Big Bowl Chili
Temperatures are slowly dropping and the leaves are turning which means that it’s chili season! There’s not a cook or weekend chef who loves beer, America, and football who doesn’t make a decent chili.
Big Joe’s Butternut Squash Soup
I’m a huge fan of butternut squash soup, but then again, I’m a big fan of butter in general. It's perfect when the weather starts to cool down in the fall or in the middle of winter too.
Big Joe Shares Uncle Pete’s Sauce and Pasta
My very funny and talented Uncle Pete Meahan, who I grew up with in the Bronx and who later lived in Fair Haven, NJ sent me this great recipe. Uncle Pete is an actor, artist, very good cook, and an all-around fun guy!
Kick off football season with Big Joe’s tailgating spread
With the Rutgers opener tonight and the regular season of the NFL kicking off this Thursday I wanted to share with you my go-to recipes that I like to serve when tailgating. These can all be made ahead of time.
